Easy Broccoli Stalk Slaw

Who else doesn't know what to do with their broccoli stalks after cutting them off? Slaws are great because you can pack a lot of good crunch and flavor into a few bites. This slaw below is extremely customizable (like many slaws in fact) and may even become a new staple in your house! By using broccoli stalks in your slaws you get that good crunch without an overpowering taste of broccoli.
INGREDIENTS:
Slaw
2-4 broccoli stalks
1-2 carrots (depending on how much they yield)
OPTIONAL (but I highly recommend that you use at least a few): almonds, red cabbage, apples (I like to use Gala or Pink lady, but any kind works), cauliflower leaves (yes! they are edible), green onions, dried cherries/craisins, etc.
Dressing
1/4 cup apple cider vinegar
1/4 cup olive oil (or any type of neutral oil like avocado, etc.)
1 Tbsp honey/sugar (or maple syrup/agave nectar)
1-2 cloves of garlic (or 1/2-1 tsp of garlic powder)
Splash of grainy mustard
Salt and pepper to taste
OPTIONAL: 1-2 tsp herb of choice (I like to use cilantro/coriander), cayenne pepper (to taste), 1/4 cup of mayo if you want to make it creamier
Remember you can always adjust the measurements if you want more creaminess, spiciness, etc.
Step 1: Peel/shave the outermost layer of the broccoli stalks.
Step 2: Shred broccoli stalks and carrots with a box grater (use the biggest hole similar to the one that you would use to shred cheese). Add to a medium-size mixing bowl.

If you do not have a grater or just want a rougher chop, you can always julienne them. This also goes for the other optional ingredients. I recommend that you do not shred the apples as they get very wet; I like to slice the apple in half and then slice it thinly.
Step 3: In a small bowl, whisk together vinegar, olive oil, honey, garlic, mustard, salt, and pepper. Set aside.

Step 4: Pour a small amount of dressing into the mixing bowl a little at a time and mix until well combined. Keep adding until you reach the desired amount.
Step 5: Season with a little more salt, pepper, and the herb of your choice. Chill slightly before serving and enjoy!
